Thank you for reaching out. A 2021 Autobiography V8 SC with 26,000 miles on the odometer was just acquired by me. It has received 8 oil changes and all other necessary maintenance up to this point, all performed by the dealer. Upon purchase from the dealer, the oil and brake fluid were changed.
I plan to replace the oil every year or 5,000 miles at the very least and the brake fluid every two years. Is there a certain fluid that I need replace every year?
components such as: engine coolant, front differential oil, transfer case oil, dynamic response fluid, oil for the gearbox and filter, rear non-locking differential oil, and rear locking differential oil
The schedule below is not reliable, and I trust this forum's judgment. Due to the low frequency of use, the schedule will primarily be based on years rather than mileage.

With the exception of engine oil, the intervals they've provided aren't too bad. Engine oil every 5,000 miles, brake fluid, transfer case, and rear locking differential every 50,000 miles, and all other oils every 100,000 miles is only to be safe. You won't be wasting money if you change them too soon, but you will go below the required interval on all of them. The engine oil is the most important part, and it seems like you've got it under control. Changing the engine and brake fluid at the recommended intervals seems reasonable to me, and I'm still not sure I'd be anxious about doing it on an annual basis. Honestly, you could probably go a little farther with the brake fluid, but do what makes you happy.

Is there a decent article somewhere about the oils for the differential and transfer case? Or is it identical to all cars?

With the car's suspension raised, getting to the back is a breeze.
The removal of the shield makes accessing the front a bit more complicated. It's also necessary to address the bracket that is blocking the path.
Take note: There are two schools of thought on this, but levels do not fill to spill.
A distinct oil is specified if your vehicle has a rear electronic differential.
The transfer case is also straightforward.
